Arla Foods Ingredients has recently developed clean label yogurt to help major brands meet China’s growing demand for yogurt at room temperature.
This is the first room temperature yogurt in the clean-label category and is made up of 100% native whey protein Nutrilac®YO-4575. This new launch offers manufacturers with a ‘non-frozen’ yogurt positioning but with excellent all-natural ingredients.
Nutrilac®YO-4575 has a unique thermal stability and texture features, with room temperature which can be maintained throughout the shelf life of yogurt. It also has a silky texture and stability without additives or preservatives.
China has one of the fastest sales growth for yogurt products, with liquid yogurt at room temperature being its fastest growing category. In 2019, liquid yogurt accounted for nearly 30% of the entire yogurt market share in China and it has enjoyed significantly higher growth rate than frozen yogurt or liquid milk. Research has also shown that Chinese consumers prefer yogurt made up of ‘natural ingredients’ and ‘no artificial flavors/coloring. As such, there is huge potential for room-temperature and ‘clean label’ liquid yogurt.
Nutrilac®YO-4575 offers protein content higher than 3%, with high nutritional value due to its amino acid content. In addition, like all other Arla Foods Ingredients’ whey products, its raw milk is sourced from grass-fed cattle in the EU.
Arla Foods Ingredients has so far conducted R&D on 3 potential flavors for the yogurt namely vanilla, peach and green tea which can be further expanded to include other flavors. The ‘clean label’ yogurt contains only milk, cream (38?t), sugar, Nutrilac®YO-4575 protein and native starch.
