Arla Foods Ingredients, a global leader in value-added whey solutions, has recently developed a new protein solution to help manufacturers create indulgent protein bars with high levels of protein in every layer.
A global trend study found that about 80% of consumers have expressed their interest in protein, up from 69% in 2014 and protein bars are increasingly common in retail stores. However, most protein bars have a single texture compared to the delicious candies that offer multiple textures. This is a challenge in an increasingly saturated protein bar market, as food texture is a major driver of consumer purchasing decisions.
Arla Foods has recently launched a protein bar concept in which brands are able to increase the protein content of all parts of their protein bars, including bar bodies, fillings and coatings, without increasing their size or affecting taste or texture.
?The new concept formula is based on the company’s Lacprodan® range of premium whey and milk protein ingredients. It ensures that fragrant chocolate bars retain their flavor and softness throughout their shelf life, and each protein bar provides 30% protein, allowing merchants and manufacturers to make high-protein claims on the packaging. With the new solution, brands can use formula prototypes or use them as the basis for their own formulas.
