Functional Properties
WACKER’s alpha-cyclodextrin is enzymatically derived from starch and thus fully vegan, kosher and halal. The naturally occurring molecule is ring-shaped with a lipophilic cavity and a hydrophilic exterior. The lipophilic interior can interact with fatty acids, providing excellent emulsification and stabilization properties. Due to its unique structure, alpha-cyclodextrin can control the amount of free fatty acids in both the feed solution and the final coconut milk powder, thereby improving the storage stability and sensory profile of coconut milk powder. In addition, it enables the masking of undesired flavor notes.
Easy to Use in Established Processes
CAVAMAX® W6 is offered as a free-flowing white powder with no taste or odor and can be easily integrated into existing manufacturing processes. Due to its unique properties, CAVAMAX® W6 enables stable feed solutions in synergy with various carriers commonly used during the spray drying process. In addition, it helps to control the amount of free fatty acids generated during processing.
